Melt bacon grease in a medium saucepan over medium heat. Add the onions and sweat for a bout 10 minutes until soft and translucent; do not let color. Add the remaining ingredients and let simmer for about 20 minutes or until the sauce reaches the your desired consistency. Cool until room temperature before storing in the refrigerator in an air-tight container. The sauce will keep in the refrigerator for up to a couple weeks.
