Bring quinoa, 2 cups of water, and a large pinch of salt to a boil in a medium saucepan. Reduce to a simmer and cover for 15 minutes. Quinoa will be cooked when the water has been absorbed. Spread on a baking sheet and let cool.
Transfer cooled quinoa to a mixing bowl and add remaining ingredients. Taste for seasoning and adjust as necessary.
