Tzatziki
- 1 cup Greek yogurt
- 1 cup very thinly sliced cucumbers
- ¼ cup thinly sliced shallots
- Zest and juice from ½ lemon
- 3 tablespoons finely chopped mint
- Kosher salt, to taste
- Stir to combine all ingredients. Cover and chill for an hour before serving.
