Ingredients

  • 2 well-marbled prime New York Strip steaks 1-1.5 inches thick
  • Kosher salt
  • Coarse black pepper
  • High smoke point oil avocado or grapeseed
  • Rosemary sprig optional
  • Garlic cloves optional
  • Pat of butter optional

Instructions

  • Fire up your Bull Dual Fuel Countertop Pizza Oven and pre-heat it to a scorching 700°F. This ensures a beautiful sear on the steak.
  • Pat your dry with paper towels. A dry surface sears better! Generously season both sides with kosher salt and coarse black pepper. Let the steak come to room temperature for 20-30 minutes. This ensures even cooking.
  • Rub a thin layer of oil on your cast iron pan. Once your pizza stone has reached 700°F, place your pan in the oven and let it scorch hot. You want that pan to sizzle when the steak hits it!
  • Carefully place your seasoned steak in the screaming hot cast iron pan. Place the cast iron pan back in the Bull Dual Fuel Countertop Pizza Oven. Sear undisturbed for 2-3 minutes per side, turning as necessary, depending on the thickness of your steak and desired doneness. This is where the magic happens – a beautiful crust forms, locking in all the juicy goodness.
  • For an extra layer of flavor, toss in a sprig of rosemary and a few smashed garlic cloves into the pan with the steak during the last minute of searing.
  • Use the Bluetooth digital thermometers you have included to check the steak’s internal temperature. Here’s a guide for perfect doneness:
  • Rare: 125°F (52°C)
  • Medium-Rare: 135°F (57°C)
  • Medium: 145°F (63°C)
  • Medium-Well: 155°F (68°C)
  • Well-Done: 160°F (71°C)
  • Once the crust has formed and the steaks have reached your desired doneness remove them from the Bull Dual Fuel Countertop Pizza Oven. Transfer the steak to a cutting board and tent it loosely with foil once cooked to your desired doneness. Let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
