Grill Skill: Onions

grilled-onions-2Sweet with a little smoky char, grilled onions are an essential ingredient to backyard cooking.  Grilling onions with a live fire caramelizes their sugars and that little bit of char gives adds that delicious smoky, umami flavor component.  Whether they’re to top an amazing burger or are to be part of a bigger meal, grilled onions are an essential grill-skill to have in your arsenal.

How-To Grill Onions

Preheat your grill for medium-high cooking with direct heat.  As always, brush and oil the grates before you begin cooking.  Cut the top and bottom off of the onion and peel away the papery outer layers. Place the onion top down on the cutting board to make it stable.  With a sharp knife help parallel to the cutting board, slice the onion into 1/2-inch slices.

Using toothpicks or bamboo skewers, secure the rings together by running the skewer through the side (trim off the ends of the skewer if they stick out more than 1/2-inch from the onion).  This will keep the rings together and make flipping them easier.  Lightly brush with oil of choice and place on preheated grill.  Cook 4 to 5 minutes per side or until they begin to char and blister.  Be careful not to cook the too fast, you want the onion to soften as well.
